Potato and Cheddar Bacon Frittata

Prep and cook time: 45 minutes
Serving size: 5 oz.
Numbers of servings: 10

10 large eggs
2 ½ tablespoons water
4 tablespoons olive oil
1 medium red onion, chopped (about 2 cups)
½ teaspoon salt
½ teaspoon ground black pepper
1 (26 oz.) bag frozen chopped baked potatoes and cheddar bacon sauce

 
  1. Whisk eggs, water, salt, and pepper. Set aside.
  2. Heat the oil in a large ovenproof nonstick skillet over medium heat
  3. Add onion and cook until it begins to soften (about 5 minutes)
  4. Add egg mixture and a bag of potato and cheddar bacon sauce
  5. Sprinkle with salt and pepper for extra seasoning (optional)
  6. Cover and cook over medium heat until egg mixture set around the edges but still is somewhat liquid in the middle (about10 minutes)
  7. Preheat the broiler to 400 degree Fahrenheit or low setting
  8. Place a skillet under the broiler until the surface is set and golden brown (about 14 minutes).
  9. Slide the frittata out of the skillet. Slice into wedges and serve.
