
Potato and Cheddar Bacon Frittata

10 large eggs
2 ½ tablespoons water
4 tablespoons olive oil
1 medium red onion, chopped (about 2 cups)
½ teaspoon salt
½ teaspoon ground black pepper
1 (26 oz.) bag frozen chopped baked potatoes and cheddar bacon sauce
- Whisk eggs, water, salt, and pepper. Set aside.
- Heat the oil in a large ovenproof nonstick skillet over medium heat
- Add onion and cook until it begins to soften (about 5 minutes)
- Add egg mixture and a bag of potato and cheddar bacon sauce
- Sprinkle with salt and pepper for extra seasoning (optional)
- Cover and cook over medium heat until egg mixture set around the edges but still is somewhat liquid in the middle (about10 minutes)
- Preheat the broiler to 400 degree Fahrenheit or low setting
- Place a skillet under the broiler until the surface is set and golden brown (about 14 minutes).
- Slide the frittata out of the skillet. Slice into wedges and serve.
