
Potato and Cheddar Bacon Green Chili Quiche

3 refrigerated pie crusts, room temperature
3 (4 oz.) cans diced green chilies, drained
12 green onions, chopped
1 bag of frozen chopped baked potatoes and cheddar bacon sauce
3 ¾ cups half and half
12 eggs
¾ teaspoon salt
A recipe for 1 pie:
- Preheat oven to 425 degree F.
- Unfold crust. Using wet fingertips to press together any tears. Press crust into 9 inch deep pie plate. Press foil over to hold shape.
- Bake 7 minutes. Remove from the oven. Remove foil. Reduce temperature to 400 degree F.
- Sprinkle green onion, chilies, and potatoes with sauce over crust.
- Beat 1 ¼ cups of half and half, 4 eggs, and ¼ teaspoon salt in medium bowl and blend. Pour a mixture into crust.
- Cover edges of pie crust before baking
- Bake until knife inserted into center comes out clean (about 55 minutes).
- Let quiche stand 5 minutes. Cut into wedges and serve.
