
Potato, Sausage and Chipotle Cheddar
“QUICKSIDES” Frittata

10 large eggs
2 ½ tablespoons water
1 tablespoon cooking oil
1 lb spicy breakfast sausage
1 cup green onion, sliced
½ teaspoon salt
½ teaspoon ground black pepper
1 (26 oz.) bag frozen chopped baked potatoes and chipotle cheddar sauce
- Whisk eggs, water, salt, and pepper. Set aside.
- Brown spicy breakfast sausage in a large ovenproof nonstick skillet over medium heat.
- After meat has browned, add oil and onion, then cook about 2 more minutes.
- Add egg mixture and spread it around the skillet.
- Add a bag of Quicksides frozen potatoes and cheddar chipotle sauce and even it out.
- Sprinkle with salt and pepper for extra seasoning (optional).
- Cover and cook over medium heat until egg mixture sets around the edges even though it’s still is somewhat liquid in the middle (about 10 minutes).
- Remove cover and transfer skillet to a preheated 350°F oven for approximately 30 minutes allowing eggs to cook thoroughly and cheese to melt.
- Switch the oven to broil (500°F) and let it cook for 5 more minutes or until the top turns golden brown. Check for doneness in the center of the pan using toothpick or fork to make sure eggs are thoroughly cooked.
- Slide the frittata out of the skillet. Slice into wedges and serve.
