Potato and Cheddar Broccoli “Quick Sides” Soup

Prep and cook time: 23 minutes
Serving size: 2 cups
Numbers of serving: 4

1 tablespoon butter
1 small sweet onion
1 (26 oz.) bag of frozen chopped baked potatoes with cheddar broccoli sauce
2 ½ cups milk
1 ½ teaspoon salt
1 teaspoon ground black pepper

 
  1. In a medium pot, cook onion in butter over medium heat, stirring occasionally, until softened (about 5 minutes).
  2. Add milk and a bag of Quicksides frozen potatoes with cheddar broccoli sauce to onion.
  3. Cover and cook over medium heat until cheese is melted (about 8-10 minutes), stirring occasionally.
  4. Add salt and ground black pepper.
  5. Simmer 1 minute and serve (or let it sit for thicker texture).
